Did we make it to the gym? Did we ever! I didn’t even need to knock on Jack’s door to get him out of bed. We were out the house at 6.45 am and on the treadmill by 7.05am. Get in! Gym, swim and sauna all packed in before starting work at 9.00am. Sally stayed at home, but this was a decision she was content with and I wasn’t going to force her into something she didn’t want to do. So after a cracking start to the day, what was for breakfast? Maple and Cinnamon Buckwheat Crunchies with fresh Brazil Nut Milk… Sound good? It was. On the menu for lunch today was Simple Raw Hummus with a salad of grated carrots, raisins, lemon juice, coconut, chilli and a touch of salt. If you’d like to make the hummus for yourself, here is the recipe!
SIMPLE RAW HUMMUS
- 2 small courgettes, peeled and roughly chopped.
- 1 cup sunflower seeds, soaked
- 1/4 cup tahini
- 2 tbsp cumin
- juice of half a lemon
- 1/4 cup of olive oil
- 1 tsp sea salt
Sally – “Well I’ve definitely felt more awake and alert. I’ve not felt drowsy this morning which is interesting. I’ve had a headache but nothing too serious. I have found it difficult to focus at work though. Not sure what that’s about. But the actual raw food itself is just delicious. The breakfast cereal is my new favourite. And I definitely want to learn how to make the nut milk! I could happily sip away at just that…”
Jack – “I’m definitely noticing a difference already. My thinking feels quicker, but not necessarily more efficient. It’s racing about quite a bit. Also I’m feeling really amazing one second and then the next I get a lull. I haven’t felt deprived or like I’m missing out, although today I had a yearning for a ham sandwich on white bread with mayonnaise. But I haven’t had a ham sandwich in months so I don’t know whether it’s got anything to do with the raw food! I’m definitely not feeling like ‘Oh let’s get these two weeks out the way then we can have a fry up and a roast dinner!’. I’m really enjoying it and dinner tonight was very tasty”.
The dinner Jack is talking about was this, a mound of tantalising courgette spaghetti with raw pesto, olives and pine nuts. Bellissimo!
